Pickin’ in the Park - A Full Day of Music, Food & Family Fun for a Great Cause

Mark your calendar for March 21st, because Gibbs is tuning up for a brand-new community tradition. The 1st Annual Pickin’ in the Park Fundraiser takes over Gibbs Ruritan Park (7827 Tazewell Pike, Corryton) from 11:00 AM to 5:00 PM, bringing together live music, local flavors, and family-friendly fun — all in support of the Gibbs Foundation.

This all-day outdoor celebration will feature live bluegrass and local bands, a lineup of food vendors, and a unique Dessert Hall you won’t want to miss. Stroll through local craft vendors, let the kids loose in the Kid Zone, and enjoy a laid-back spring day designed for all ages.

Admission is just $10 per person, with kids under 5 free, making it an easy yes for families, neighbors, and friend groups. Parking is donation-based, and all proceeds benefit the Gibbs Foundation, supporting programs and initiatives that strengthen the local community.

A Sweet Valentine’s Day Experience - Chocolate Truffles & Dipped Strawberries Class

If you’re looking for a Valentine’s Day plan that’s delicious, hands-on, and a little extra memorable, this one checks every box. On February 14th, enjoy an evening of chocolate, fun, and creativity at the Chocolate Truffles & Dipped Strawberries Class, hosted by Union County Farmers Market.

Held from 6:30 PM to 9:30 PM at the Heritage Culinary Center (115 Durham Drive), this beginner-friendly workshop is led by Debbie Meritsky of Eat My Granola. Whether you come with a partner, a friend, or treat yourself to a solo night out, you’ll learn how to create decadent chocolate treats completely from scratch.

Participants will roll, coat, and decorate rich chocolate truffles, dip fresh strawberries, and learn the basics of chocolate care and food handling along the way. You’ll even package your creations into gift-ready boxes, making it the perfect Valentine’s Day keepsake—or dessert.

The class is hands-on, no experience required, and limited to 15 participants, keeping things relaxed and personal. The cost is $55 per person, which includes all ingredients, tools, packaging, and recipes. Closed-toe shoes are required, with hair tied back and no jewelry for safety.

Business Spotlight on Balanced You Clinic

Balanced You Clinic is a place where Knoxville residents come to reset, restore, and reconnect with their health—body, mind, and spirit. Located in West Knoxville, the clinic offers a thoughtfully integrated mix of healing services including acupuncture, massage therapy, qi-gong, hypnotherapy, herbal medicine, infrared sauna, and more, all under one welcoming roof.

At the heart of Balanced You Clinic is owner and licensed acupuncturist Rebekah Knause, whose career in hands-on healing spans more than two decades. Rebekah began practicing massage therapy in 2002 and spent eight formative years working alongside chiropractors at what is now Apple Health Care. In 2010, she launched her own practice, Balanced You, and continued expanding her skill set—becoming a certified yoga teacher and later discovering the profound impact of acupuncture on both herself and her clients.

That discovery led Rebekah to Jung Tao School of Chinese Medicine in Sugar Grove, North Carolina, where she graduated in 2018. While she valued the independence of her own practice, she envisioned something bigger: a collaborative clinic where experienced, heart-centered practitioners could work together in service of the community. That vision became today’s Balanced You Clinic—a thriving, multidisciplinary wellness space.

The clinic is now home to a deeply experienced team: six acupuncturists, three massage therapists, and Gwen, the clinic’s hypnotherapy practitioner and life coach. Rebekah is especially excited about the newest additions to the team—three acupuncturists with more than 14 years of experience each, trained across diverse schools and traditions. Together, they bring a remarkable depth of knowledge and perspective that benefits every client who walks through the door.
